Lemon-Butter Salmon with Cauliflower Purée

Butter (unsalted)

- Step 1
Trim & remove the outer leaves from the cauliflower. - Step 2
Cut the cauliflower into small florets. - Step 3
Add the florets to a pot of salted boiling water. Cook for 10 min, or until fork-tender. - Step 4
Slice the lemon into thin rounds. - Step 5
Drain the cooked cauliflower. - Step 6
Add a third of the butter to the cauliflower. Season with salt & pepper. Use in immersion blender or blender to purée until smooth & creamy. - Step 7
Melt the rest of the butter in a pan over medium heat. Add the salmon, skin-side down. - Step 8
Add the lemon slices to the pan. Season with salt & pepper. Cook the salmon & lemon for 3-5 min. - Step 9
Turn over the salmon & the lemon slices. Cook for 3-5 min, or until the salmon is cooked through. Remove from heat. - Step 10
Spread the cauliflower purée over a serving plate. Arrange the salmon & lemon over top. Drizzle with the lemon-butter sauce. Season with salt & pepper. Garnish with sliced almonds (optional). Enjoy!
