Flank steak
1 handful
Arugula
1 oz
Parmesan
1/2 tbsp
Pesto

1 tsp
Pine nuts

- Step 1
Heat a drizzle of oil in a pan over medium-high heat. Add the steak. Cook for 2-3 min on each side, or until done to your liking. Remove from the heat. Let the steak rest for 2 min. - Step 2
Then thinly slice the steak. - Step 3
Peel the parmesan into ribbons, if not using grated parmesan. - Step 4
In a small bowl, whisk together a drizzle of olive oil & the prepared pesto sauce. - Step 5
Smear the pesto onto a serving plate. Arrange the arugula & steak slices over top. Add the parmesan shavings. Garnish with pine nuts (optional). Season with salt & pepper. Enjoy!
