Hot Honey Chicken Wings with Cucumber Salad

- Step 1
Preheat the oven to 425ºF. In a small mixing bowl, add melted butter, hot sauce & honey. Stir it all together. - Step 2
In a large mixing bowl, add the chicken wings & half of the hot-honey mixture. Season the wings with salt, pepper, cayenne pepper (optional) & chili powder if you have any. Toss everything together to evenly coat. - Step 3
On a foil or parchment paper lined sheet tray, add the chicken wings. Flip the wings so the skin side is up. Roast for 15-18 min. - Step 4
Meanwhile, using a box grater or knife, shave the cucumber into thin slices. - Step 5
Peel & thinly slice the red onion. - Step 6
Add the sliced cucumber to a bowl. Dress the cucumber salad with white wine vinegar, a drizzle of olive oil, salt, pepper & fresh herbs if you have any. Add the sliced red onion & toss everything together. Set the salad aside until serving. - Step 7
Remove the chicken wings from the oven. Drizzle the remaining hot-honey sauce onto the wings & roast for another 8-10 min. If desired, broil for 1-2 min to crisp up the skin. - Step 8
Remove the wings from the oven, serve with the cucumber salad & additional hot-honey sauce if desired. Enjoy!
