  • Step 1
    Preheat the oven to 350°F. Wash & peel the carrots. Cut them in half lengthwise. Put them in a parchment-lined baking dish.
  • Step 2
    Sprinkle the carrots with cumin, a drizzle of olive oil, honey, salt & pepper. Roast them in the oven for 30 min, or until caramelized & fork-tender.
  • Step 3
    Meanwhile, cook the quinoa according to the package instructions.
  • Step 4
    Spoon the quinoa onto a plate. Top with the roasted carrots, crumbled feta & torn mint leaves. Season with salt, pepper & a drizzle of olive oil. Enjoy hot or cold!
