Honey-Curry Pork Chops & Mashed Sweet Potatoes

Pork chops (boneless)
1/2 lb
Sweet potato
1 tsp
Honey
1/2 tsp
Curry powder
1/4
Lemon

Frying pan, Stovetop, Pot (small), Peeler, Colander, Knife

- Step 1
Peel & cube the sweet potatoes. (Skip this step for frozen or pre-cubed sweet potatoes.) - Step 2
Add the sweet potatoes to a pot of salted boiling water. Cook for 10-15 min, or until fork-tender. - Step 3
In a small bowl, combine the honey, curry powder, lemon juice, grated lemon zest, salt, pepper & a drizzle of oil. - Step 4
Heat another drizzle of oil in a pan over medium-high heat. Add the pork chops. Season with salt & pepper. Cook for 4 min on each side, or until done to your liking. - Step 5
Drain the sweet potatoes. - Step 6
Add salt, pepper & a pat of butter to the drained sweet potatoes. Mash until smooth & creamy. Cover to keep warm. - Step 7
Once the pork chops are done, lower the heat & pour in the sauce. Using a spoon, baste the pork with the sauce for 1-2 min. Then turn off the heat. - Step 8
Add the mashed sweet potatoes to a serving plate. Top with the pork chops. Spoon the pan sauce over top. Garnish with sesame seeds (optional). Enjoy!
