Fingerling potatoes

Red onion
1/4 cup
Parsley (fresh)
1/4 cup
Cilantro (fresh)
1/4 cup
Dill (fresh)
1 tsp
Red wine vinegar

Lemon
optional
1/2 tsp
Sugar (granulated)

- Step 1
Cook the baby potatoes in a pot of salted boiling water for 15 min, or until fork-tender. Drain & set aside. - Step 2
Thinly slice the red onion. Place the onion in a small bowl. Pour the vinegar over top. Add the sugar & a pinch of salt (optional). Stir to combine. Set aside to marinate. - Step 3
In a food processor or blender, combine the parsley, cilantro, dill, salt, pepper & a drizzle of oil. Add a squeeze of lemon juice (optional). - Step 4
Blend until it forms an almost smooth texture. Add another drizzle of olive oil if you like. - Step 5
Add the potatoes to a serving bowl. Add the green herb mixture & marinated onions. Stir to combine. - Step 6
Season to taste & enjoy!
