Harissa Salmon with Couscous

Couscous
1 tbsp
Harissa (paste)
1/4 cup
Sun-dried tomatoes
1/8 cup
Parsley (fresh)

- Step 1
Coat the salmon with prepared harissa sauce & a drizzle of olive oil. Season with salt & pepper. Set aside to marinate. - Step 2
While the salmon is marinating, cook or soak the couscous according to package instructions. - Step 3
Once the couscous has absorbed all the water. Fluff with a fork, like rice. - Step 4
Add most of the chopped or sliced sun-dried tomatoes & chopped parsley to the couscous. Add a drizzle of olive oil. Season with salt & pepper. Stir to combine. - Step 5
Heat a drizzle of oil in a pan over medium heat. Add the salmon & cook for 3-4 minutes on each side, or until cooked through. - Step 6
Serve the salmon over the couscous. Garnish with remaining sun-dried tomatoes & parsley leaves. Dinner time!
