Spring mix lettuce

Ham (deli slices)

Swiss cheese (shredded)

Shred the Swiss cheese, if needed. - Step 2
In a small bowl, whisk together the eggs, salt & pepper. - Step 3
Heat a drizzle of oil in a pan over medium heat. Pour the beaten eggs into the pan. - Step 4
When the eggs firm up around the edges, arrange torn or chopped ham over half the omelette. Sprinkle the cheese over the ham. Season with salt & pepper. - Step 5
Carefully fold the omelette in half. Reduce the heat to low. Cover & cook for 3-5 min, or until the eggs are done to your liking. - Step 6
Add the salad greens to a serving plate. Season with olive oil, salt & pepper. Place the omelette alongside the salad. Dig in!
