  • Step 1
Cut the peach around the pit & slice into wedges. Drizzle the peach wedges in olive oil & set aside.
  • Step 2
Slice the mozzarella into thin rounds.
  • Step 3
Pat the steak dry. Season all over with salt, pepper & any additional seasonings you love! Drizzle oil over the steak & rub to coat.
  • Step 4
Preheat a grill or grill pan on medium-high heat. Add the steak & peach wedges. Cook the peaches & steak for 3-4 min, undisturbed. Flip everything. Cook the peaches for another 1-2 min, then remove from the heat. Continue grilling the steak for another 2-3 min, then remove from the heat. Rest the steak for 3-5 min before serving.
  • Step 5
Meanwhile heat the rice according to package directions.
  • Step 6
Plate the rice & steak. Build the Caprese salad by alternating fresh mozzarella, grilled peaches & basil. Top with balsamic glaze & season with salt. Serve & enjoy!
