Grilled Steak with Corn & Couscous Salad

Corn on the cob
1/3 cup
Couscous
8 oz
Beef (ribeye steak, boneless)
1/4 clove
Garlic
2 tbsp
Butter (unsalted)
1 tbsp
Parsley (fresh)

- Step 1
Cook the couscous according to package instructions. - Step 2
Peel & mince the garlic. - Step 3
Wash & finely chop the parsley. - Step 4
Heat a grill pan over high heat. Add the corn & char on all sides, about 5-7 min. - Step 5
Meanwhile, in a bowl, combine softened butter, minced garlic & half of the parsley until smooth. - Step 6
Pat the steak dry with a paper towel. Season all over with salt & pepper. Spread the softened butter onto one side of the steak. - Step 7
Add the steak to the grill pan, butter side down. Cook undisturbed on medium-high heat for about 6 min per side (for medium-rare). Transfer to a cutting board to rest for a few min before slicing. - Step 8
Once the corn is cool to the touch, cut off the kernels. - Step 9
Fluff the cooked couscous with a fork. Add the corn & remaining parsley. Season with salt, pepper & a drizzle of olive oil. Mix it all together. - Step 10
Slice the steak & serve with the corn & couscous. Enjoy!
