  • Step 1
    Thinly slice the white & light green parts of the leek. Rinse well & pat dry.
  • Step 2
    Heat a drizzle of olive oil in a pan over medium-high heat. Add the leeks & crushed or minced garlic. Cook, stirring for 5 min.
  • Step 3
    Cover the pan, reduce the heat to low & let cook for 5 min, stirring occasionally.
  • Step 4
    Meanwhile, thinly slice the avocado.
  • Step 5
    After 5 min, add the spinach to the pan. Cook, stirring for another 2 min.
  • Step 6
    Form little wells for the eggs in the pan mixture. Then break the eggs into the wells.
  • Step 7
    Season with salt & pepper. Cover & let cook for 5 more min, or until the eggs are done.
  • Step 8
    Then, remove from heat. Add the sliced avocado, crumbled feta & some fresh parsley leaves (optional).
