  • Step 1
    Heat a drizzle of olive oil in a frying pan over medium heat. Add the chicken. Season with salt & pepper. Cook for 4-5 mins on each side. Add a drizzle of water, cover & continue cooking for 4-5 mins or until the chicken is fully cooked (internal temp of 165ºF).

    Meanwhile, wash & cut the cherry tomatoes in half.

    Wash & cut the cucumber into small cubes.
  • Step 4
    Peel & thinly slice the red onion.
  • Step 5
    Remove the chicken from the pan & use two forks to shred the chicken into bite-sized pieces.

    In a bowl, combine the cucumber, cherry tomatoes, olives, chicken, crumbled feta, yogurt, oregano & red onion. Season with salt & pepper. Toss to combine.
  • Step 7
    Warm the tortillas in the microwave (if desired). Add the chicken salad to the center of the tortilla. Fold both edges of the wrap inward, then roll it up tightly. Cut the wrap in half. Serve & enjoy!
