- Step 1
Preheat the oven to 400ºF. In a large mixing bowl, add the ground chicken, grated parmesan cheese, panko breadcrumbs, pesto & egg. Mix to combine. - Step 2
Form the meat mixture into 12 meatballs, about 3 tbsp each. Place the meatballs on a parchment paper-lined sheet tray. Add a drizzle of olive oil to the meatballs & place in the oven. Bake the meatballs at 400ºF for 15-18 min or until the meatballs are fully cooked through. - Step 3
Meanwhile, heat up the grains according to package instructions. - Step 4
Remove the meatballs from the oven & plate with the heated grains & fresh arugula. Add a drizzle of olive oil to the arugula & season to taste. Serve & enjoy!
