White rice (long grain)

Cook the rice according to package instructions. - Step 2
Meanwhile, wash & cut the cucumber into small cubes. - Step 3
Peel & coarsely grate the carrots. - Step 4
Cut the avocado in half, remove the pit & carefully cut into small cubes. - Step 5
Heat a drizzle of oil in a skillet over medium heat. Add the dumplings & cook for 2-3 min, until golden. Add a splash of water, cover & steam for another 2-3 min, until fully cooked. - Step 6
Once the dumplings are fully cooked, remove the lid & let the remaining water evaporate (about 1-2 min). - Step 7
Serve the rice in a bowl with the cucumber, carrots, avocado & dumplings. Drizzle with soy sauce & sprinkle with chopped chives & sesame seeds, if using. Enjoy!
