Add the chicken stock, curry powder & coconut milk to a pot over medium heat. - Step 2
Once it comes to a boil, add the rice noodles, shrimp, salt & most of the basil. (Reserve a bit of basil for garnish.) Cover the pot & let the soup cook for 6 min. - Step 3
Serve garnished with the reserved basil leaves. Enjoy!
