  • Step 1
    Peel & mince or crush the garlic.
  • Step 2
    Peel & dice the onion.
  • Step 3
    Add a drizzle of olive oil to a pot over medium heat. Add the onion, garlic & cumin. Cook, stirring for 2 min.
  • Step 4
    Add the beans & 1 cup of water (per serving) to the pot. Season to taste with salt & pepper. Cover & cook for 5 min.
  • Step 5
    Remove from heat. Serve the soup in bowls with drizzled cream, lemon zest & a squeeze of lemon juice. Garnish with chopped cilantro (optional). Enjoy!
