  • Step 1
    Wash & finely chop the lettuce.
  • Step 2
    Wash & halve the cherry tomatoes.
  • Step 3
    In a mixing bowl, grate the onion & garlic (add finely chopped parsley if you have any). Add in the ground beef. Season with salt, pepper & spices of your choice (we love cumin, chili powder or taco seasoning). Mix everything with a fork or your hands.

    Using your hands, form one ball per serving.

    Place one meatball in the middle of one tortilla, then smash it with a fork so the meat is covering all of the tortilla.

    Heat a drizzle of oil in a non-stick pan on medium-high heat. Add the tortilla to the pan, meat side down. Sear the meat for 2-3 min. Flip & cook for an additional 2 min so the tortilla gets toasted.
  • Step 7
    Remove the tortilla from the heat. Top with lettuce, tomatoes & a few slices of red onion if you have any left. Crumble cotija cheese on top. Season with salt & pepper. Serve & enjoy!
