  • Step 1
    Cook or reheat the chicken according to package directions.
  • Step 2
    Meanwhile, peel & finely slice the onion.
  • Step 3
    Wash & halve the cherry tomatoes.
  • Step 4
    Peel the avocado & remove the pit. Thinly slice.
  • Step 5
    Once golden & crispy, remove the breaded chicken from the oven. Slice the cutlets.
  • Step 6
    In a small bowl, combine mayonnaise, ketchup & apple cider vinegar. Mix until smooth.
  • Step 7
    On a plate, add rinsed & roughly chopped lettuce. Top with cherry tomatoes, avocado, breaded chicken & red onions. Drizzle the dressing on top of the salad & season with pepper. Serve & enjoy!
