Creamy Tomato Gnocchi with Prosciutto

Prosciutto

Cherry tomatoes

Red onion

1/4 cup
Goat cheese (crumbled)

1/4 clove
Garlic

1/2 tsp

- Step 1
Heat a drizzle of olive oil in a pan on medium heat. Add the gnocchi. Stir & cook for 2-3 mins. Cover & continue cooking for 3-4 mins over low heat, until golden brown. Remove from the pan & set aside. - Step 2
Meanwhile, peel & thinly slice the red onion. - Step 3
In the same pan, heat another drizzle of olive oil over medium heat. Add the red onions & cherry tomatoes. Grate in the garlic. Season with salt & pepper. Stir to combine, then cover & cook for 5-6 mins on low heat. - Step 4
Once the cherry tomatoes have all burst, add the honey, basil (optional), & half of the goat cheese. Stir to combine. - Step 5
Add the gnocchi into the sauce & stir. Remove from the heat. - Step 6
Serve the gnocchi in a shallow dish topped with the prosciutto & the remaining goat cheese. Garnish with fresh basil (optional). Serve & enjoy!
