In a pot of salted boiling water, cook the pasta according to package instructions. When the pasta is done, set aside a small ladle of cooking water, then drain the pasta. - Step 2
Meanwhile, peel & finely chop the onions. - Step 3
Pat the chicken dry & cut it into bite-sized pieces. - Step 4
Heat a drizzle of olive oil in a pan, over medium heat. Add the chicken. Season with salt & pepper. Cook until the chicken is golden brown on all sides, about 5-6 min. Set aside & keep warm. - Step 5
In the same pan, heat a drizzle of olive oil, over medium heat. Add the onions & grated garlic. Sauté for 2-3 min. - Step 6
Add the crushed tomatoes & stir to combine. Lower the heat & simmer for 5 min. - Step 7
After 5 min, add: the cream, chicken, drained pasta & reserved cooking water, if needed. Stir to evenly coat. - Step 8
Serve the creamy tomato & chicken pasta on a plate & garnish with basil leaves, if you have any. Re-season to taste & enjoy!
