Creamy Squash Pasta with Sausage

Butternut squash (fresh, cubed)
4 oz
Italian pork sausage (ground)
3 oz
Pasta (fusilli or rotini)
2 tbsp
Parmesan (grated)

- Step 1
In a pot of boiling salted water, add the butternut squash & cook for 18-20 min, until very tender. - Step 2
Meanwhile, heat a drizzle of olive oil in a frying pan over medium heat. When hot, add the sausage meat. Season with salt & pepper. Cook for 5-7 min, stirring often, until the meat is browned & cooked through. Set aside. - Step 3
In another pot of boiling salted water, cook the pasta according to package directions. - Step 4
Once the squash is fork-tender, reserve a ladle of cooking water. Drain the squash & add it back to the pot. - Step 5
Add heavy cream, then season with salt & pepper. Purée until smooth & creamy, using an immersion blender, blender or food processor. If necessary, add a splash of reserved cooking water & blend again. Grate in half of the parmesan & mix. - Step 6
Check the pasta for doneness. Reserve a small ladle of cooking water, then drain the pasta. - Step 7
In the same pot, heat a drizzle of olive oil over medium heat. Add the squash purée & reserved pasta cooking water. Mix until smooth. Add the drained pasta & mix again. - Step 8
Finally, add the cooked sausage meat & the rest of the grated parmesan. Mix for another 1-2 min to combine everything. - Step 9
Serve the creamy squash pasta with sausage on a plate. Finish with extra pepper & enjoy!
