Creamy Pasta with Mushrooms & Tofu

Tofu (firm)
2.5 oz
Pasta (fusilli or rotini)
1 cup
White mushrooms (whole)
1 tbsp
Crème fraîche
1/2 clove
Garlic
2 tbsp
Parmesan (grated)

1/8 bunch
Parsley (fresh)

- Step 1
Cook the pasta according to package instructions. Reserve a cup of pasta cooking water & drain the pasta when al dente. - Step 2
Meanwhile, wash & thinly slice the mushrooms. - Step 3
Pat the tofu dry with a paper towel, then cut into thin strips (about 1/4-inch thick). - Step 4
Heat a drizzle of olive oil in a frying pan over medium heat. Once hot, add the tofu strips. Season with salt, pepper & any additional seasonings you love! Cook for 8-10 min, stirring often, until golden-brown. Transfer to a plate & set aside. - Step 5
In the same pan, heat another drizzle of olive oil over medium heat. Add the sliced mushrooms. Season with salt, pepper & any additional seasonings you love! Cook for 5-6 min, until softened & browned. - Step 6
Grate in the garlic & continue cooking for 1-2 min. - Step 7
Add the tofu back into the pan with the crème fraîche & grated parmesan. Mix everything well, until the sauce is creamy. - Step 8
Add the drained pasta to the pan. Mix again & add a splash of reserved pasta water if the sauce looks dry. - Step 9
Serve the pasta with extra grated parmesan & fresh parsley, if you have any. Enjoy!
