Creamy Mushroom Chicken with Polenta

  • Step 1
    Peel & thinly slice the onion.
  • Step 2
    Wash & slice the mushrooms.
  • Step 3
    Heat a drizzle of olive oil in a pan. Add the mushrooms & onions. Season with salt & pepper. Brown the mushrooms for 5-8 min over high heat.
  • Step 4
    In another pan, heat a drizzle of olive oil on medium heat. Add the chicken & season with salt & pepper. Cook the chicken for 6-8 min on each side until fully cooked.

    Meanwhile, boil the water (1 cup per serving) with a pinch of salt in a saucepan. Lower the heat & add the polenta while whisking quickly for 3-4 min, until the polenta is thick.

    Once the polenta is thick, add a dab of butter & season with salt & pepper. Mix well & set aside to keep warm.

    Once the mushrooms are cooked, add the cream & mustard. Mix & simmer on low heat for an additional 1-2 min to thicken the sauce.
  • Step 8
    Serve the polenta with the chicken & the creamy sauce on top. Garnish with fresh herbs if you have any, enjoy!
