  • Step 1
    In a pot of salted, boiling water, cook the pasta according to package instructions. Reserve a ladle of cooking water before draining! Add the drained pasta back to the pot.
  • Step 2
    Peel & halve the garlic.
  • Step 3
    Carefully halve an avocado & remove the pit.
  • Step 4
    In the bowl of a blender or food processor, add chives, garlic, feta cheese, avocado, spinach, salt, pepper & olive oil. Blend until smooth & creamy. Tip: add a few splashes of pasta water as needed to help blend the sauce.
  • Step 5
    Pour the creamy sauce over the drained pasta. Mix it all together until evenly coated.

    Serve immediately with extra crumbled feta! Enjoy!
