Creamy Corn, Prosciutto & Zucchini Pasta

2 slices
Prosciutto
1/4 cup
Corn (canned)
1/2
Zucchini
1 tbsp
Crème fraîche
1/2 clove
Garlic
1 pinch
Basil (dried)

- Step 1
In a pot of boiling, salted water, cook the pasta according to package directions. At the end of cooking, reserve a small ladle of cooking water, then drain the pasta. - Step 2
Meanwhile, wash & cut the zucchini into half-moons. - Step 3
Heat a drizzle of olive oil in a pan over medium heat. Add the zucchini & brown for 4-5 min. Season with salt & pepper. - Step 4
At the same time, in another pan on medium-high heat, add the prosciutto slices. Cook until the slices are crispy & set aside. - Step 5
Add the drained & rinsed corn to the pan with the zucchini. Mix & continue cooking for 4-5 min. - Step 6
Reduce the heat, then grate in the garlic. Add the cream, reserved cooking water & dried basil. Mix well & cook for 1 additional min. - Step 7
Add the pasta & mix it with the sauce & veggies. - Step 8
Serve the pasta on a plate with the crispy prosciutto. Re-season to taste & add a few fresh basil leaves, if you have them. Enjoy!
