Chicken breast

1 cup
Baby bella mushrooms (whole)

1/2 cup
Spinach (fresh)

1/4 cup
Heavy cream

1 pinch
Italian seasoning

- Step 1
In a pot of salted, boiling water, cook the pasta according to package instructions. Once cooked through, reserve some pasta water & set aside. Drain the pasta & keep warm. - Step 2
In the meantime, wash & slice the mushrooms into quarters. - Step 3
Pat the chicken dry & slice into strips. - Step 4
Heat a drizzle of olive oil in a pan, over medium-high heat. Add the chicken, season with salt & pepper. Cook for 2-3 mins on all sides, until lightly golden brown. - Step 5
Add the mushrooms & washed spinach leaves into the pan. Stir & continue cooking for another 4-5 min, until the spinach has wilted. - Step 6
Add the heavy cream & a splash of the reserved pasta water. Reduce the heat to low. Stir & simmer for 1-2 min, until the sauce has slightly thickened. - Step 7
Add the drained pasta & Italian seasoning. Stir it all together. - Step 8
Serve the Creamy Chicken, Mushroom & Spinach Pasta in a bowl. Re-season to taste & enjoy!
