Creamy Broccoli Soup

1/2 clove
Garlic
1.5 cups
Broccoli (fresh)
1 tbsp
Cream cheese

- Step 1
Wash the broccoli. Chop off the stem. Cut the broccoli into florets. - Step 2
Melt a dab of butter in a pot over medium heat. Add the minced garlic & broccoli. Cook, stirring for 2 min. - Step 3
Add 0.5 cup of water (per person). Season with salt & pepper. Bring it to a boil. Then reduce the heat, cover & simmer for 8 min. - Step 4
Add the cream cheese to the pot. Purée until smooth & creamy using an immersion blender, blender or food processor. - Step 5
Add a bit more water if too thick. - Step 6
Serve garnished with another dollop of cream cheese (optional). Enjoy!
