Corn Fritters with Yogurt Sauce

Corn (canned)
1/4 cup
Flour (all-purpose)
1/2
Egg
1 tbsp
Parmesan (grated)
1 handful
Spring mix lettuce
2 tbsp
Greek Yogurt (plain)
1/4 cup
Milk (whole)
1 tsp
Baking powder

Chili powder

Drain the corn. - Step 2
In a bowl, whisk together the flour, baking powder, milk & egg. - Step 3
Add the parmesan cheese & corn. Season with salt & pepper. Stir to combine. - Step 4
Heat a few drizzles of oil in a pan over medium heat. - Step 5
Add a ladleful of the corn batter. Flatten lightly with a spatula. - Step 6
Cook for 3 min on each side. Then set aside on paper towels to drain. - Step 7
Continue making fritters with the remaining batter. - Step 8
In a small bowl, mix the Greek yogurt, salt, pepper, chili powder (optional) & a drizzle of olive oil. - Step 9
Serve the fritters with the yogurt sauce for dipping. Add a side salad with your favorite dressing. Enjoy!
