  • Step 1
    If using frozen cod, defrost beforehand. In a pot of salted boiling water, cook the rice according to package instructions.
  • Step 2
    Meanwhile, peel & small dice the shallots.
  • Step 3
    Melt a dab of butter in a pan, over medium heat. Add the cod. Season with salt, pepper & Italian seasoning. Cook for 2-4 min on each side, or until cooked through.
  • Step 4
    In the meantime, melt a dab of butter in a second pan, over medium heat. Add the shallots & grated garlic. Sauté for 1-2 mins.
  • Step 5
    Add the creamed spinach & a splash of water to the pan. Cover with a lid & cook for 5 min. Mix well & season with salt & pepper to taste.
  • Step 6
    Serve the fluffed rice on a plate with the creamed spinach & grilled cod. Add a lemon wedge, if you have some & top with chopped shallots. Re-season to taste & enjoy!
