Cod (fresh)

1 cup
Creamed spinach (frozen)

1/3 cup
White rice (long grain)

1/2
Shallot

1/2 clove
Garlic

1 pinch
Italian seasoning

- Step 1
If using frozen cod, defrost beforehand. In a pot of salted boiling water, cook the rice according to package instructions. - Step 2
Meanwhile, peel & small dice the shallots. - Step 3
Melt a dab of butter in a pan, over medium heat. Add the cod. Season with salt, pepper & Italian seasoning. Cook for 2-4 min on each side, or until cooked through. - Step 4
In the meantime, melt a dab of butter in a second pan, over medium heat. Add the shallots & grated garlic. Sauté for 1-2 mins. - Step 5
Add the creamed spinach & a splash of water to the pan. Cover with a lid & cook for 5 min. Mix well & season with salt & pepper to taste. - Step 6
Serve the fluffed rice on a plate with the creamed spinach & grilled cod. Add a lemon wedge, if you have some & top with chopped shallots. Re-season to taste & enjoy!
