Red lentils (dry)

1/4 cup
Coconut milk

1/4 clove
Garlic

1/2 tsp
Ginger (fresh)

1 tsp
Curry powder

1/4
Yellow onion

Coconut (shredded, unsweetened)

- Step 1
Peel & dice the onion. - Step 2
Peel & mince the garlic. - Step 3
Heat a drizzle of oil in pan over medium heat. Add the onion, garlic & curry powder. Stir to combine. - Step 4
Add the lentils & the grated or minced ginger. Add the coconut milk & enough water to cover. - Step 5
Cover & simmer for 15 min over medium heat. - Step 6
Serve garnished with shredded coconut & fresh cilantro (optional). Enjoy!
