recipe

  • Step 1
Roughly chop the chocolate then add it to a large, heat-proof, mixing bowl.
  • Step 2
In a saucepan, over low heat, add the heavy cream. Stir continuously until the cream begins to steam. Remove from the heat just before it begins to bubble.
  • Step 3
In the bowl with chocolate, pour in the heated cream. Mix until the chocolate is melted. The mixture should be smooth & glossy.
  • Step 4
In another mixing bowl, add half of the peanuts with the caramel sauce. Stir to coat evenly.
  • Step 5
Line a loaf pan with with parchment paper.
  • Step 6
Spread half of the chocolate ganache into the bottom of the pan using the back of a spoon. Top with the biscuits & set aside in the freezer for 10 min, until solid.
  • Step 7
Scoop the ice cream on to the frozen biscuit layer. Gently spread the ice cream into an even layer with the back of a spoon.
  • Step 8
Spread the caramelized peanuts on top. Rest for at least 2 hr in the freezer.
  • Step 9
Take the ice cream bar out of the freezer. Spread the other half of the chocolate ganache on top, then scatter the remaining peanuts. Freeze for 10 more min to solidify, or until serving.
  • Step 10
Turn out the ice cream bar onto a plate. Slice & enjoy immediately!
