2 slices
White bread (sliced)

1/4 cup
Chickpeas (canned)

1 tbsp
Mayonnaise

1 tsp
Greek Yogurt (plain)

1/4
Lemon

1/8
Red onion

1/2 handful

- Step 1
If desired, toast the slices of bread. - Step 2
Peel & finely chop the red onion. - Step 3
In a deep plate or bowl, pour in the drained & rinsed chickpeas. Coarsely mash them with a fork. - Step 4
Add the mayonnaise, yogurt, lemon zest, lemon juice & the chopped onion. Season with salt & pepper. Mix thoroughly. - Step 5
Spread the chickpea salad on one of the two slices of bread. Add the lettuce & a drizzle of olive oil. - Step 6
Close the sandwich & cut it in half if desired. Enjoy!
