  • Step 1
    If desired, toast the slices of bread.
  • Step 2
    Peel & finely chop the red onion.
  • Step 3
    In a deep plate or bowl, pour in the drained & rinsed chickpeas. Coarsely mash them with a fork.
  • Step 4
    Add the mayonnaise, yogurt, lemon zest, lemon juice & the chopped onion. Season with salt & pepper. Mix thoroughly.
  • Step 5
    Spread the chickpea salad on one of the two slices of bread. Add the lettuce & a drizzle of olive oil.
  • Step 6
    Close the sandwich & cut it in half if desired. Enjoy!
