Cherry tomatoes

Preheat the oven to 400°F. Wash & cut the potatoes into 1-inch cubes. - Step 2
Wash & cut the cherry tomatoes in half. - Step 3
On a sheet tray, add the potatoes & tomatoes. Drizzle with olive oil. Season with salt, pepper & any additional seasonings you love (we recommend Italian seasoning & garlic powder!). Toss to coat & push to one half of the sheet tray. - Step 4
Place the chicken on the other half of the sheet tray. Drizzle with olive oil, then season with salt & pepper. Transfer to the oven & cook for 25-30 min, or until the chicken is fully cooked (165°F internal temp) & the potatoes are tender. - Step 5
Remove the sheet tray from the oven, sprinkle everything with parmesan, then return to the oven for 2-3 min, until the cheese has melted. - Step 6
Serve the chicken & potatoes on a plate. Garnish with fresh basil, if you have any. Enjoy!
