Chicken with Carrot Purée & Tzatziki

Chicken breast

Carrots (fresh)
1 handful
Spring mix lettuce
2 tbsp
Tzatziki
1 tbsp
Chives (fresh)
1/4 tsp
Garlic powder

- Step 1
Boil a pot of salted water. Peel & cut the carrots into 1-inch pieces. Cook the carrots in the boiling water until fork tender, about 5-7 min. Drain the carrots & return to the pot. Use a fork or potato masher to purée the carrots until smooth. Add salt, pepper, garlic powder & a drizzle of olive oil. Mix it all together. - Step 2
Heat a drizzle of olive oil in a pan over medium-high heat. Pat the chicken dry. Season with salt & pepper then add it to the pan. Sear for 4-5 min on each side, until the chicken is fully cooked (internal temp reaches 165°F). - Step 3
Rinse & chop the chives. - Step 4
Serve the chicken over carrot purée with a side of salad & tzatziki sauce for dipping. Enjoy!
