  • Step 1
    Clean & slice the mushrooms.
  • Step 2
    Cut the chicken into thin strips.
  • Step 3
    Peel & mince the garlic & ginger.
  • Step 4
    Heat a drizzle of oil in a pot over medium heat. Add the chicken, garlic & ginger. Cook, stirring for 3-5 min.
  • Step 5
    Add the chicken stock & bring to a simmer.
  • Step 6
    Stir in the miso paste. Add the udon noodles & sliced mushrooms. Reduce the heat to low & cover. Cook for 5 min, or until the noodles are done.
  • Step 7
    Serve the soup in bowls garnished with fresh cilantro (optional). Enjoy!
