Chicken Quinoa Bowl with Tzatziki

  • Step 1
    Cook the quinoa according to package instructions. Fluff with a fork & set aside.
  • Step 2
    Wash & slice the zucchini into half-moons.
  • Step 3
    Heat a drizzle of oil in a pan over medium heat. Add grated or minced garlic, zucchini, salt & pepper. Sauté 4-5 min until the zucchini begins to brown.
  • Step 4
    Push the veggies to the sides of the pan to create a space in the middle. Pat the chicken dry with a paper towel & season with salt & pepper. Add the chicken to the pan. Sear, undisturbed for 6 min on one side.
  • Step 5
    Flip the chicken & cook for an additional 6 min or until the chicken is fully cooked through. Remove the chicken & zucchini from the pan. Slice the chicken.
  • Step 6
    Assemble a bowl with a bed of quinoa, a handful of arugula, zucchini & sliced chicken. Add a few spoonfuls of tzatziki & enjoy!
