- Step 1
Peel & mince the garlic. - Step 2
Peel & chop the onion. - Step 3
Peel & dice the carrot. Cut the chicken into thin strips. - Step 4
Heat a drizzle of olive oil in a pot over medium heat. Add the carrots, chicken, garlic & onion. Cook, stirring for 5 min. - Step 5
Add the tomatoes. Cook for 2 min. - Step 6
Add the chicken broth & pasta to the pot. Season with salt & pepper. Reduce the heat to low, cover & simmer for 10 min. Add more liquid if you like more broth! - Step 7
Season with salt & pepper. Serve the soup garnished with shaved parmesan & fresh basil (optional). Enjoy!
