recipe
- Step 1
In a pot of boiling salted water, cook the pasta according to the package instructions. - Step 2
Meanwhile, clean & slice the mushrooms. - Step 3
Heat a drizzle of olive oil in a pan over medium-high heat. Add the mushrooms & grated garlic. Season with salt & pepper. Stir & cook for 5 min. Remove from the heat & set aside. - Step 4
Once the pasta is cooked, save a few ladles of cooking water per person, then drain the pasta. - Step 5
Heat a dab of butter & a drizzle of olive oil in the same pan. Add the chicken cutlet & brown it for 3-4 min on each side, over medium heat, until it is golden brown. Transfer to a cutting board. - Step 6
Add back the mushrooms & stir in the crème fraîche, grated parmesan & pasta cooking water. Add salt & pepper to taste. Mix until a creamy sauce is formed. - Step 7
Add the pasta to the mushroom sauce & mix well to coat evenly. - Step 8
Slice the chicken cutlet & serve with the creamy mushroom pasta. Add more grated parmesan if you have. Enjoy!
