- Step 1
Place the chicken on a sheet of plastic wrap. Cover with another sheet. Then use a heavy pot, rolling pin or meat tenderizer to pound the chicken into thin cutlets. Season both sides with salt & pepper. - Step 2
Arrange the ham & cheese slices over the flattened chicken breast. Then fold the chicken breast in half. Trim or tuck in any extra cheese & ham around the edges. - Step 3
Crack the egg into a shallow dish. Whisk to combine. Place the bread crumbs in separate dish. Coat the chicken breast in flour on both sides (optional). - Step 4
Thoroughly dredge the chicken in the egg & then the bread crumbs. Then repeat dredging in both. - Step 5
Heat a drizzle of oil in a pan over medium heat. Add the chicken. Season with salt & pepper. Brown for 3 min. - Step 6
Peel & slice or cube the potatoes. - Step 7
Add the potatoes to a pot of salted boiling water. Cook for 7-10 min, or until fork-tender. - Step 8
Flip over the chicken. Season with salt & pepper. Brown for 2 min. Reduce the heat to low. Cover & let cook for 7-10 min. - Step 9
Drain the potatoes. Add them to a bowl with the butter, milk, salt & pepper. Mash it all together, using a fork or potato masher. - Step 10
When the chicken is cooked through & the cheese is melty, remove from the heat. Slice the chicken. Serve it alongside the mashed potatoes. Enjoy!
