Cook the rice according to the package instructions. Fluff the cooked rice. - Step 2
Cube the chicken. - Step 3
Heat a drizzle of oil in a pan over medium-high heat. Add the chicken. Cook, stirring for 3 min. - Step 4
While the chicken is cooking, wash & slice the cucumber into ribbons with a vegetable peeler. - Step 5
In a small bowl, mix together the peanut butter & coconut milk. Season with salt & pepper. Add a squeeze of lime (optional). - Step 6
Serve the rice, cucumber ribbons & chicken in a serving bowl. Drizzle with the coconut sauce. - Step 7
Season with salt & pepper. Garnish with fresh cilantro (optional). Enjoy!
