  • Step 1
    Cook the rice according to the package instructions. Fluff the cooked rice.
  • Step 2
    Cube the chicken.
  • Step 3
    Heat a drizzle of oil in a pan over medium-high heat. Add the chicken. Cook, stirring for 3 min.
  • Step 4
    While the chicken is cooking, wash & slice the cucumber into ribbons with a vegetable peeler.
  • Step 5
    In a small bowl, mix together the peanut butter & coconut milk. Season with salt & pepper. Add a squeeze of lime (optional).
  • Step 6
    Serve the rice, cucumber ribbons & chicken in a serving bowl. Drizzle with the coconut sauce.
