Chicken breast
1/4 cup
Tomato sauce
1 tbsp
Peanut butter
1/2
Yellow onion
1/3 cup
White rice (long grain)
1/3 cup
Chicken broth

1 pinch
Cayenne pepper

- Step 1
Cook the rice according to the package instructions. - Step 2
Peel & thinly slice the onion. - Step 3
Cut the chicken into pieces. - Step 4
Heat a drizzle of oil in a pot over medium heat. Add the onions. Sauté for 3 min. Add cayenne if you like a kick (optional)! - Step 5
Add the tomatoes & stir. - Step 6
Add the chicken broth (or bouillon cube with water!) & the peanut butter. Stir to combine. - Step 7
Add the chicken & stir. Season with salt & pepper. Reduce the heat to medium-low. Cook for 5-10 min, or until the chicken is cooked through. - Step 8
Serve the mafé alongside fluffy rice. Garnish with a drizzle of olive or peanut oil. Enjoy!
