  • Step 1
    Pat the chicken dry with a paper towel. Cut the chicken into strips & add them to a bowl with the taco seasoning. Toss to evenly coat.
  • Step 2
    Heat a drizzle of olive oil in a pan over medium-high heat. Cook the chicken 3-4 min per side until nicely seared & fully cooked.
  • Step 3
    Meanwhile, in a small saucepan over low heat, add sour cream, cheddar cheese & a pinch of black pepper. Mix well until the cheese is fully melted & saucy.

    Thaw & warm frozen corn according to package instructions. Peel & slice an avocado.

    Spread a layer of cheese sauce on the tortilla. Top with chicken, corn & avocado. Fold the tortilla sides inwards, over the filling. Use your thumbs to fold & tightly roll up the bottom of the burrito.
  • Step 6
    Heat a drizzle of oil in a clean pan over medium heat. Add the burritos to the pan, seam-side down. Heat 1-2 min on each side, until golden brown. Serve & enjoy!
