  • Step 1
    Wash & halve the baby tomatoes.
  • Step 2
    In a small bowl, whisk together the cracked eggs, salt, pepper & butter.
  • Step 3
    Toast the bread in a pan, broiler or toaster.
  • Step 4
    Melt a bit of butter in a pan over medium heat. Add the tomatoes. Cook, stirring for 2 min. Remove the tomatoes from the pan.
  • Step 5
    Add a bit more butter to the same pan. Pour in the eggs. Reduce the heat to low & scramble the eggs until they're cooked to your liking.
  • Step 6
    Place the toasted bread on a serving plate. Top with the scrambled eggs, dollops of cream cheese, cherry tomatoes & a sprinkle of mixed greens (optional).
  • Step 7
    Season with salt & pepper. Seize the day!
