Cheesy Veggie Pasta

Pasta (elbow macaroni)
1/2 cup
Broccoli (frozen)
1/4 cup
Spinach (frozen)
1/8 cup
Heavy cream
1/8 cup
Parmesan (grated)
1/8 cup
Mozzarella (shredded)

- Step 1
Bring a large pot of salted water to a boil. Cook the pasta according to package directions. Reserve a bit of pasta water & set it aside. Thaw the veggies in the microwave for 2-3 mins. - Step 2
Drain the pasta & add it back to the pot. On low heat, add the butter, broccoli & spinach. Stir & cook until the veggies warm through, about 2 min. - Step 3
Add the heavy cream, parmesan, mozzarella cheese & a splash of the reserved pasta water to the pot. Stir & cook until the cheese is fully melted, about 2 min. Season with salt & pepper. Serve & enjoy!
