Cauliflower Rice Stir Fry with Shrimp

Stir-fry veggie medley (frozen)

Teriyaki sauce

Raw shrimp
2 tbsp
Green onion (scallions)
1/2 cup
Riced cauliflower (frozen)

- Step 1
Thaw the shrimp if necessary, then rinse & thinly slice the green onion on an angle. Separate the white & green parts. - Step 2
Add a drizzle of neutral oil to a non-stick pan with half of the teriyaki sauce. Add the shrimp in an even layer. Sear undisturbed on the first side for 2-3 min. Flip then continue cooking until no longer pink. Toss the shrimp around in the sauce until well-coated, then transfer to a plate & set aside, leaving the remaining sauce in the pan. - Step 3
In the same pan, over medium-high heat, add the whites of the green onion, frozen veggies & cauliflower rice. Stir-fry the mix for 4-5 min until everything is heated through. Then stir in the pre-cooked quinoa. - Step 4
Drizzle in the remaining teriyaki sauce & stir it all together for 1-2 min until the mixture begins to brown. - Step 5
Add back the pan-fried shrimp & mix again. Stir in sesame seeds if you have & remove from the heat. Serve in a bowl, garnished with the remaining green onion & enjoy!
