Broccoli & Cheddar Soup

Broccoli (fresh)

Carrots (fresh)

Veggie broth

Yellow onion
1/8 cup
Cheddar (shredded)
1/8 cup

Stovetop, Peeler, Pot (small), Knife

- Step 1
Thinly slice the onion. - Step 2
Wash & peel the carrot. Cut it into 1-inch pieces. - Step 3
Add a drizzle of olive oil to a pot over medium heat. Add the onions & carrots. Cook for 5 min, stirring frequently. - Step 4
Add the veggie broth. (Or use a bouillon cube with water!) Add the milk. Season with salt & pepper. Cover & cook for 5 min. - Step 5
While the soup is cooking, cut the broccoli into small florets. - Step 6
Add the broccoli to the pot. Reduce the heat to low & cook for 10 min. - Step 7
Add most of the cheddar cheese to the pot, reserving the rest for garnish. Turn off the heat & stir until the cheese has melted. - Step 8
Serve in soup bowls, topped with the remaining cheese. Enjoy!
