  • Step 1
    Warm the tortillas in a hot pan for 30 seconds on each side.
  • Step 2
    Place the tortillas on a serving plate. Cut the avocado in half & remove the pit. Scoop the avocado flesh into a small bowl. Season with salt & pepper. Then mash the avocado with a fork.
  • Step 3
    Bring the same pan to medium-low heat. Add a drizzle of oil. Crack the eggs into the pan. Scramble the eggs for 2-3 min, or until cooked to your liking.
  • Step 4
    Add the scrambled eggs & prosciutto to the tortillas. Top with chopped cilantro (optional). Enjoy!
