1/3 cup
White rice (long grain, cooked)

Creamed spinach (frozen)

1/2
Shallot

1/4 clove
Garlic

Preheat the oven to 400°F. On a sheet tray lined with parchment paper, arrange the breaded fish fillets. Bake in the oven according to package instructions, until golden & crisp. - Step 2
Meanwhile, peel & small dice the shallots. - Step 3
Heat a drizzle of olive oil in a pan, over medium heat. Add the shallots & grated garlic. Sauté for 1-2 mins. - Step 4
Add the creamed spinach & a splash of water to the pan. Cover with a lid & cook for 5 min. Mix well & season with salt & pepper to taste. - Step 5
Meanwhile, heat the rice according to package instructions. - Step 6
Serve the fluffed rice on a plate with the creamed spinach & breaded fish fillets. Add a lemon wedge, if you have some & top with chopped shallots. Re-season to taste & enjoy!
