  • Step 1
    In a pot of salted boiling water, cook the pasta according to package instructions. Drain & set aside.
  • Step 2
    Wash & peel the zucchini into long ribbons.
  • Step 3
    Halve the artichokes.
  • Step 4
    In a serving bowl, add the cooked pasta & the pesto. Mix it all together.
  • Step 5
    Add the chicken, artichokes, zucchini strips & toss it all together. Add the crumbled feta on top. Season with salt, pepper & a drizzle of olive oil. Add a few basil leaves if you have any. Serve & enjoy!
