- Step 1
Peel & cube the potatoes. - Step 2
Peel & chop the onion. - Step 3
Peel & mince the garlic. - Step 4
Toast the spices for 1 min in a dry pan over medium-low heat. - Step 5
Add a drizzle of oil to the pan & raise the heat to medium-high. Add the onion & garlic. Sauté for 3 min. - Step 6
Add the canned tomatoes & 0.5 cup of water (per person). - Step 7
Add the potatoes. Season with salt & pepper. Stir to combine. Reduce the heat to low, cover & simmer for 15 min. - Step 8
Add the peas & a splash of water if the potatoes start to stick. - Step 9
Cover & cook for 5 more min. - Step 10
Serve garnished with chopped cilantro (optional). Enjoy!
